    Acai Berry and Pomegranate Granita

    This recipe uses Acai Berry Pomegranate and Vanilla – An elegant fusion of bright Ceylon tea with the sweet and chocolatey notes of acai berry, pomegranate and softened by a touch of vanilla. A delightful tea to share with friends.

    The secret to a melt in the mouth granita is in the stirring. Using a chop stick, stir the mix whilst in the freezer regularly, this will ensure you have large pieces of ice.

    INGREDIENTS: Serves 4-6 people

    500ml Dilmah Exceptional Acai Berry Pomegranate and Vanilla tea

    200g caster sugar

    500ml pomegranate juice

    Fresh pomegranate, to serve

     

    COOKING INSTRUCTIONS

    Combine the Acai Berry Pomegranate and Vanilla tea and sugar in a large bowl and stir until sugar dissolves completely. Add the pomegranate juice and stir to combine. Set aside to cool completely.

    Pour pomegranate juice mixture into a shallow metal container. Cover with foil and place in the freezer. Freeze, stirring with a fork every hour to break up ice for 6 hours or until frozen solid.

    Use a fork to break up granita. Divide evenly among serving glasses. Top with fresh pomegranate to serve.
